  • Egusi (Egunsi) stew or soup is a Nigerian perhaps Yoruba cuisine delicacy made from ground dried melon seed. In this case it was made with a base of blended tomatoes onion bell peppers paprika ginger and spiced with turmeric and cardamom fried in red palm oil (epo pupa) with added Shitake mushrooms shrimps and smoked mackerel fish. Most times but not in this instance green leafy vegetables such as Ewuro Tete Igbagba and shapa are added. Really nutritious and filling and it goes well with Okele or swallow and rice.
